As you can see I watch a lot of different crap, I also watch Subbed or Dubbed and don't really care either way. I'm just not sure what I want to watch that I haven't yet and require some suggestions.
Soul Eater - If you can get past the first three eps (I'd recommend skipping eps 2 and 3) it becomes a damn excellent show.
I see no Gunbuster on your list. This must be rectified.
Eureka Seven is really slow, but I think it's a good watch. Just don't watch the movie.
Monster is an excellent anime. I'm pretty sure Hulu has it, too. It's about a famous brain surgeon named Dr Tenma going after a serial killer. It was once described to me as Death Note without the supernatural elements, and while that's not really that accurate, I think it's probably the best way to describe it without spoiling anything.

Yes, I just watched the first 3 on Soul Eater and was debating watching four or not. Nice to know it picks up then.
I've been meaning to watch Gunbuster, but every time I'm about to something comes up and I forget about it for 3 or 4 months. It's a bad Cycle.
Tried Eureka Seven and just couldn't get into it, got up to episode 5 on it and haven't watch it much since.
I'll give Monster a shot though, sounds interesting.

Mother of Fuck, Krogo, every single thing I was gonna recommend is on that list. MSG, Zeta Gundam, Chrono Crusade, Love Hina, Captain Tylor. That is my usual list of "HEY YOU SHOULD WATCH THESE" series and dammit you've seen all of them.
I recommend Digimon. I still love it after all these years >.>
If you played (And liked) Tales of Symphonia, you could watch the OVA series.\
When They Cry (Higurashi no naku koro ni (Or something close to that)) is a series that creeps me the fuck out, but I keep going back to anyway.
I second Monster and Soul Eater, as well as skipping episodes 2 and 3 of Soul Eater. The series really DOES get good in episode 4, and you are only confused about who new people are for about five seconds.
Totally gonna recommend Robotech despite knowing that it's a horribly fucked up Macross. It's different enough to qualify as it's own :P

Yeah, I have all of Robotech, didn't put that on there though because I just finished watching Macross Frontier and was stuck in Macross mode. Robotech and Harlock is what got me into watching Anime though, so at least the weird cutting job accomplished something!
It's not even an actual complete list to be honest, I've watch more but just can't remember everything off the top of my head.

Maybe you'd like Gungrave. Character designs are by the same dude as Trigun.
If you're gonna watch Gungrave, though, I recommend skipping the first episode. It gets repeated in almost the same form later on and is a huge spoiler.
Also, Gunslinger Girl. One of my favorite series, only the first season though, the second one feels more like your average anime.
I also notice a horrible absence of Neon Genesis Evangelion,
The Melancholy of Haruhi Suzumiya... and... Gilgamesh.
I'm just tossing out shows in my DVD shelf missing from your list, to be honest. But they're all good shows.

Majin Tantei Nogami Neuro is pretty good. Best way to describe it is Detective Conan, if Conan himself were a demon who tortured his assistant with diabolical traps and there was magical living hair. it isn't long, just 25 episodes. The manga has a different ending and main villain, but both are pretty good.
I recently watched Airmaster (http://www.crunchyroll.com/airmaster) and it was decent. It's about a young girl who joins a street fighting tournament and then beats everyone's ass with the power of gymnastics.
Black Lagoon. Shit man. Just, Black Lagoon. It reminds me a lot of Cowboy Bee-bop, but that really isn't a fair comparison as both shows have entirely different tones. Currently, there are two complete seasons with 12 episodes each and a third season either currently airing or going to air soon.
GaoGaiGar. Watch it, if you do and don't instantly grow many chest hairs and cry manly tears then you are probably an alien, who will be promptly smashed by GaoGaiGar's giant golden hammer.
History's Strongest Disciple Kenichi! Probably one of my favorite manga (Although the fanservice has gotten a bit... excessive.) the anime is charming and fun.
Desert Punk. The English dub is hilarious, much better than the Japanese in my opinion, but still a great comedic action show.

Recommendations! Baccano and Gunbuster because, seriously, you need to watch Gunbuster and Diebuster. As for stuff that hasn't been recommended, Kino no Tabi is about Kino driving around on her talking motorcycle named Hermes, visiting independent city-states and getting into trouble exploring the local culture. She shoots people with guns sometimes. Great Teacher Onizuka is about a great teacher named Onizuka. There are antics. You'll like it, trust me.

If you can handle a bit of romance, I'd advise Maison Ikkoku and Kimagure Orange Road. Both are old shows and very long series, but they got their special charms and humor.
Also consider Golden Boy if you just want hilarious short stories (also not for the baby).
If you rather stick with action, I honestly advise you check out Hajime no Ippo. A prime example of a boxing anime and a fine example of an anime in and of itself.
... and you never seen Ranma 1/2? Try a bit of it!

You know, I've picked up Desert Punk 8 or 9 times going "Should I get this?" and then putting it down a because I could never decide. Same with Black Lagoon.
GaoGaiGear always reminded me of Voltron when i've looked at it so I haven't actually looked much into it.
Melancohly scared me when you guys talked about it's endless eight episode ring.

GaoGaiGar is more of the Super Sentai sensibility than Voltron. It is equal parts absurd and over the top awesome.

Black Lagoon is dark. Like really dark. The characters are seriously fucked up people. Still the Church of Violence is the best Church ever.

Onizuka is the best freaking teacher ever!Whoops, so it is. Still, Kino no Tabi, and I guess I'll further recommend Haruhi. Watch Haruhi in the order that it aired, not chronological. I have no clue why the DVDs are all in chronological order. The books aren't even in chronological order.
Also, Magical Shopping Arcade Abenobashi. Comedy, the episodes are in the right order, the dub is fine. Watch it in any manner you choose.

If you want a series that is without end, Yu Yu Hakusho. Same generation as DBZ. Also makes a good abridged series. Also the Gantz anime was alright.

Kurogane no Linebarrels was a bearable watch, and with the number of mecha anime you have on your list, probably something that is up your alley.
You'd probably also appreciate Shakugan no Shana and Zero no Tsukaima by looking at your list. Each has a couple seasons.
I also suggest Angel Beats(god, it's funny and depressing at the same time) and Hero Man(it's currently running, though it's nearly over, Stan Lee had a hand in it).
Infinite Ryvius is pretty awesome once you get a few episodes in. It's probably right up your alley too.

Tenchi Universe and Muyo are awesome. Tenchi in Tokyo, Pretty Sammy, and Isekai no Seikishi Monogatari(ok that one is technically not Tenchi, but the main character is supposed to be Tenchi's brother) can go to hell.

Kurogane no Linebarrels: I looked at it and debated over this for awhile.

Shakugan no Shana:Looks interesting, I'll add it to the list.
Zero no Tsukaima: I was actually looking at getting this one and was debating it. Probably will anyways it looks cool enough.

Hero Man: The current Stan Lee worries me with his decisions sometimes. looks interesting but I was wary of it.
Infinite Ryvius: I heard this one is freakin weird. Might look into it then.

The reason I'm shying away from Yu Yu is I don't really feel like watching another never ending anime from the beginning right now.

Paranoia Agent is creepy, addictive, and in some places, a tad disturbing. Without giving too much away, the story follows a variety of characters as they become involved with a serial attacker known only as Li'l Slugger. Each episode delves into the life of one of his victims, who you see in the opening and ending videos I posted. Li'l Slugger is a young boy who chases his victims down on roller blades and attacks them with a baseball bat. He then disappears before anyone can catch him.
As the series goes on, you start to realize that all of the victims are connected, all of the attacks have something in common, and Li'l Slugger may not be what he seems....
The series will drive you crazy trying to figure out who and what Li'l Slugger really is, as well as what the deal is with the pink stuffed animal you see briefly in the ending video. It's a good psychological thriller, and I highly reccommend it, but it's definitely one I'd rate M for Mature for some sexual content and general disturbia.
And the old lady is actually one of the nicer characters, if I remember correctly.

So this thread got me looking through my anime folder to see what I'd watched again, and there are a couple I haven't seen that I thought were good. Not sure if you've seen them since I didn't see them on your list, but who knows!
Darker Than Black- A fun anime about people with superpowers using them for espionage and underground crime and such. A little weird near the end, but the rest is good enough to balance it out.
Dead Leaves- Leave your brain at the door, you won't need it. It's crazy, off the wall, and dammit I loved it.
Evangelion movies- The recent ones that are remaking the series (only two out so far). Again, not sure if you saw them since you just mentioned Eva in general, but I feel they're worth mentioning just in case. And boy do they take the source material in a different direction.
Sword of the Stranger- A movie by Bones that kinda caught me by surprise. Kinda slow, but the fight scenes are really awesome, specially the last one.
And last but not least...
Megas XLR- Ok, so it's not an anime, but it's in my anime folder. And it's awesome. So find a way to watch it!

Zero no Tsumaika was kind of fun until I worked out it was another fucking anime where the hero and the heroine were never gonna just fucking get together no matter how many times they got together.
Like a dozen fucking times in that shit they both confess their twoo wuv for each other and then the next episode they're back to hating each other / not knowing how to confess their twoo wuv.
If that ain't a thing that's gonna bother you too hard then I would say go ahead and enjoy it because it's pretty good aside from that but if it is a thing that's gonna bug you then goddamn don't watch that shit.
EDIT: The thing that made an impression on me with Gantz is I was sitting there watching it about midway through the series literally saying to myself pssssssssht yeah right these are the main characters there's no way any of them are gonna die and then like five minutes later THEY ALL DO
EDIT: I just noticed you said you'd watched all of Full Metal Panic, Zero is SO INCREDIBLY the anime for you

Try King of Bandit Jing, UFO Princess Valkyrie, Magical Pokaan, and maybe Eden's Bowy.
Oh, man, you should check out Sayonara Zetsubou Sensei. It is fantastic. It is arguably the best comedy show I've seen. First season is great, second season is better, third season isn't as good but still has some fantastic bits. Seriously. Watch it.

Claymore! Claymore is pretty good although the last couple episodes get really fucking stupid (in the usual way of these things). It's got a lot of like... weird shit going on all over it but pretty good in spite of, or possibly because of that. I feel like if someone enjoyed Gantz they would probably enjoy this.
And um... Demon King Daimao ended up being surprisingly decent? Or I mean, decent by the standards of Tenchi comedy. Also, the dragon was cool.

Zero no Tsukaima and Shakugan no Shana are both light novel adaptions and very similar in themes they try to convey.

He worries me to, but the Japanese stuff he's had a hand in has turned out ok(as in he's not writing, just advising). Plus he gets awesome cameos

It's definitely somewhat weird. The main thing is the psychological nature of it and how the students cope with the world throwing them away and the things they have to do to survive. A lot of what happens on the ship mirror politics and in a way it's a lot like Lord of the Flies.

While he was pretty gar, the scene with the sea cucumber almost made me stop watching it.

Yu Yu Hakusho isn't stupidly long, it's just 112 episodes (Although this is comparatively long since most of the animes that have been suggested run like 50 max.)
It's pretty good. Now the author's other work Hunter x Hunter is stupidly long, and kinda boring. And somehow they end up fighting Cell.

I second Darker Than Black. Music is by Yoko Kanno. I'd skip the second season, though.
Seconding Hajime no Ippo as well. I've probably seen all of it about 6 times now. God help you if you manage to find and watch the dub. It's terrible.
I noticed a lack of RahXephon for someone that watches mech animes. I will assume you have seen it already, though.
Busou Renkin was a good one that I often forget I've watched.
Major! It's an anime about a kid who loves baseball and his journey to the Majors. It's actually pretty good. In its 6th season atm.

1. Damn you bastard I was almost convinced you hadn't seen it yet.
2. Tenchi comes to mind when I think of UFO PV but yeah lets go with that. Still an alright show up till season 4 were the Comedy gets more hit or miss.

And finally...The Witchblade Anime.
I also don't see BSSM on your list of watched either.
Oh and there is also Karas: The Prophecy and Karas: The Revelation as well.

As for Eureka seveN...it is a slow anime and sometimes you want to hit your head on a wall or surface of some type because of the events but they also make you laugh.
Not to mention it has one of the most epic endings I've ever seen for a series.
By the way, with the exception of BSSM...I have all the Animes I've listed on DVD. So I am not just spouting garbage here. I've watched these series/movies from beginning to end.

You know what? Angelic Layer.
Because I'm currently suffering through it and fuck it if I don't make someone else suffer through it too. It's a Bones anime, but the story is by Clamp and does nothing to hide that it's has an absolutely ABYSMAL plot ("I'll abandon my 5-year old daughter because I don't want her to see me in a wheelchair and this research will make it so that I can walk again but it'll take something like 10 years!" Mushi-shi is wonderful anime if you like storytelling. I'd suggest the sub.
My room mate from college watched Last Exile which seemed decent from what I glimpsed at now and then.
And again: Hajime no Ippo and The SoulTaker.

I never looked into that one. Don't really know why. Maybe I should fix that.
I watched it and thought it was okay. Nothing special, and I actually ended up a bit disappointed because Dante never used his turn into a demon powers.
EDIT: Watch Yakitate Japan. It is more excellent than any show about baking ought to be. Starts off just okay, but once you get to the first tournament arc it gets balls to the wall awesome.
