I think it's great that Jim Davis has stumbled onto the perfect way to write a believably insane character, even if he doesn't implement it.

There were some "Jon Arbuckle talking to his cat" comics that are floating around. Somehow those ones aren't even nearly as funny.

Do you mean Arbuckle? Where people recreate the Garfield strips without Garfield's (or any animal's) thought bubbles? While it's quality might not be quite as consistant, there are some great comics in there, as well as some wonderful surreal interpretations of the strips. It's like Postmodernist Garfield.
there was also Arbuckle's World, and Arbuckle's World Today, which was the more conventional approach to the story of Jon Arbuckle and his silent cat, but both of those seem to have fallen off of blogspot and, therefore, the internet.
