I always thought that was white, black being the absence of colors. I may be wrong.

The changing blood might be a stylistic thing, with Hussie choosing not to reveal it.

Well, it depends on whether you're talking about paint or spectral colors.

I thought the changing blood was symbolic too. Though it reminds of a fanart I saw where Karkat does have rainbow blood and is standing there like "That's right, bitch" while Equius genuflects.

No, it's definitely color-changing blood. If it were important that Hussie keep the lid sealed a little longer, he would have simply not shown us Karkat, and either given us Jack by himself, or simply shown nothing and let us visualize the scene (to the tune of "Haha Karkat got stabbed wait does this mean his blood is visible now oh MAN I have got to see this").

Jury's still out on the Skittles, though.

I'm pretty sure the equally color-changing question mark pointing to it implies that it is just an unknown color.

I thought it was all rainbow like as well until I saw the question mark. This makes things more ambiguous.

Apparently Hussie has stated that the blood is, in fact, not changing colors and he only put in that effect to 1) hide the actual color from the audience and B) screw with fan speculation, especially to troll the people who had hypothesized previously that he had rainbow blood.
