How exactly does one go about learning Flash? Are there courses I can take at my university?

I'm just really interested in seeing what I can do with it.

to the first:
You can get a tutorial book / textbook (eg: search Amazon books in the computer section for "flash" and the like) and go chapter-by-chapter doing the examples. You can get one of those that's more a complete reference and go along with Internet sites that have examples for things you want to learn as you futz around.

And Adobe maintains a site that can help you find training sites, training materials, certification, and even instructors and courses.

to the second:
Aren't you in the best position to know what courses your university offers? Look them up!

Well, yeah... I was just wondering if universities generally do teach courses about this kind of stuff. I mean, I'd think they'd have to, for programming and animation degrees, but you never know, really. But, point taken! Thanks for your help!
