Eyes and mouths have pretty specific needs as far as the way the edge loops go if you hope on rigging/animating it.
Example. Most importantly are the loops around the eyes and the mouth so that the skin deformation can happen correctly. (also, don't forget that there needs to be geometry inside of the mouth so that when it opens you won't get backward-facing polygons. A mouth-sack, if you will.)
Rigging is..... interesting. I'm not a fan but I know people who do like it. You're in a class you said? Or are you just looking up this stuff on your own?
(Sorry I'm not super helpful. Modeling/texturing/rigging isn't my focus (though I am capable of doing it), I'm more of a character animator.)
