Decide which RP to start

I want to start an RP, but I can't decide on which idea to use.

One is in a fantasy world. The king has declared that all fantasy, magical, and fairy tale ceatures must be banned from the country, or killed. You are his soldiers. Certain creatures have rewards (10 pieces of gold for a demonic puppet, 20 pieces of silver for a witch, etc, etc). That is just for the peasants and villagers though, so it doesn't really concern you. You, as the soldiers, would be sent around to go round up as many creatures as you can. The problem is that you are normal humans (No magic or anything, since it is banned. Even human mages are illegal), so most creatures can kick your ass. You have to use stories you know from stories, tall tales, fairy tales, songs, etc, etc to find the creatures' weaknesses and capture them. Thing is, lots of references, but only one truth, and I don't tell you the truth, you have to figure it out (So lets say you're fighting a vampire. One of you goes for a cross, but it does nothing to the vampire so he throws you out a window in the day then jumps through the window and begins to kill you)

The other is a basic RP, but set in a desert. I would want it to be semi-modern (Gun slingers), but I have yet to think up a logical thing (Beyond rubber bullets) so you can't just do "I shoot you and you die". Basic story will be about trying to find a paradise/oasis kinda thing.

The second other one is a basic RP, but set in a polar region. No RPs are ever in a polar region. Probably fantasy or fantasy-modern. Basic story, undecided.

Fourth is my attempt of a stealth RP, but in a fantasy world so it's not "If you make one mistake, you die", but more of a "Make a couple of mistakes, and you die". If you've seen the trailer for Thief: Deadly Shadow, it would be something like that.
