Two layers is all; no billion-piles of layers with insanely-almost-nothing-on-each or anything crazy.
I'm terrible for using layers, I usually only use four if I'm doing more detailed/shaded pictures, not like twenty. Two's my default: background and colour. If you're gonna colour over all the lines, you usually gotta use shading a lot more to differentiate between surfaces of the same material. Otherwise things look a bit flat. I find it takes longer to do it that way but that's just my style.
