A lot of the information I got comes from GameFAQs, so If you need to know requirements, just go there.

Lets just say a lot of NPC mail is needed as well as normal mail.

No wonder so many people trick the DS clock so they can send tons of mail. I won't however, because... I just won't. I don't need no stinking tricks!

To get the onion knight job, you need to send 7 messages via nintendo wifi, and 4 messages to Topapa. The 4th message back from him will be a request for help -- go back to Ur and talk to him, he will tell you that the kids went off to the cave, go in the cave and you will find the kids - who will also give you a piece of the crystal that they found.
