Stop me if I'm wrong here but it isn't like Square-Enix has sworn a blood-oath of loyalty to anyone. They've always gone where the most popular console has been. NES back in the day, SNES the generation after, PSX and PS2 after that, and now the 360 because - surprise! - it has flat-out been the most successful console. If they want to get everyone to play their game, you start by picking the most popular console.
Because they're Square Enix and their unflinching loyalty is to money and not Sony. Though I do find it funny that they've essentially sold themselves to every major console company at this point. Square's been 'round the block.

I know I'm going to get reamed for this, but-- the Wii, while a great and innovative console, and a fresh take on things, is not the best choice for an ordinary, regular style game. The WiiMote is a double edged sword, with its obvious upsides, its downsides is that it becomes unwieldy for a modern game in which it makes more sense to use buttons rather than motion. And FF is one of these. Face it, while any FF game really only needs two buttons, Enter/Action/OK and Back/Cancel with a D-Pad, its just not a Wii game without motion control. And any motion control on a normal FF game (especially one at this point in development) is gonna feel either tacked on/unintuitive or its gonna warrant a radical restyling of the entire game. And you dont want either of those. However, its perfect for a FF side-story game, focused around this kind of action. Which, I'm sure we will get sooner or later.
