You can choose between several modes for the single player part of the demo.
One is action. It makes all the dialogue choices for you, guts customization, and just lets you shoot stuff until it be dead. Difficulty is normal. The second is something I can't remember the name of. Normal difficulty, dialogue options, and customization. The third is "story". Dialogue options and customization with a very easy difficulty. You can create a new Shep from scratch for this, and in addition to the standard "spacer war hero" whatever options, you also get a choice in terms of "combat losses". Your choices are having lost Kaiden, having lost Ashley, and having lost numerous people. "The deaths of numerous squadmates and friends have begun to play a significant burden on Shepard's psychological profile."

...So basically, playing through the Suicide Mission of ME2 didn't count for shit, as the defaults include the option to choose that everyone survived.
...That's kind of a bummer. I have a ME1-ME2 playthrough that I've invested rather thoroughly in where I made choices that resulted in the deaths of three people in ME2, which I felt kind of emulated a "typical Shepard experience," as I wanted to see what it'd be like if folks were dead; it's somewhat aggravating that total newcomers to the franchise will get a better starting position than a playthrough I invested 50+ hours into. Also, the "Combat" and "Story" options just sound ludicrous. If you'd choose the Shooter option and deliberately choose to forego making dialogue choices, why not just play Call of Duty? And if you'd choose the Story option why not just read a book. ME really only works with both the combat mechanics and the dialogue selection, strip one or the other away and you're not playing ME anymore.

If you choose numerous deaths, Ashley is the survivor from ME1.
EDIT: The leveling system is more like ME1.

There is weapon customization, but I'm gonna wager you can only do that on the Normandy, so I didn't get to see what that was like. Walking feels awkward as hell, but running feels fine. Ducking to cover isn't as quick nor as smooth as it ought to be. I didn't see any hacking. Either they cut it out of the game or they cut it out of the demo. I'm thinking the former, but the latter is certainly possible. Power cooldowns aren't an all across the board thing like I believe they were in ME2. They each have individual cooldowns. Frag grenades are a power that you used the same as healing. I don't think this was the case before. Teammates are fairly useful, all things considered. Melee is still awful because if someone is close enough for melee and they aren't already in front of you to melee, they are going to fuck you up and there aren't quick ways for dealing with this due to the camera position and such. A limit of the genre, I guess. Not great. Not bad. Will let you know about multiplayer once that's online.

You can try for demo early access codes (if you have an xbox) here.
I just got my code, haven't put it in yet, but I can confirm that as of 11:30am there are still codes available. (Anybody else with an xbox want to play a round with me? Gamertag is as username)
