And since it doesn't return you at max life, casting permanence on life 3 might only condemn you to an eternity of endless torment at the hands of a conquering demon or a bad trap.

And I'm not sure why it'd do that. I mean, it'd seem to me that every time you died, you'd just come back, albeit not at full health.

Imagine if you had 6000 maximum health and some Demon managed to kill you.
Then you instantly resurrect with 600 health, and the Demon kills you again.
Over. And over and over and over and over.

Or imagine you fell down a pit trap and got impaled on a spike? Or crushed under a falling ceiling? You'd be trapped, forever, and in unending pain.

Firstly: Dispel
Secondly: You guys are forgetting the rules of being an immortal. Eventually, I'd give it 2 weeks/years, you will obtain Tibetan monk style abilities to ignore pain. Then you play the waiting game for however long it takes, somehow the source of your agony is removed (say another adventurer frees you or the demon dies of exhaustion) and you continue doing things.

Even if it does take a millennium you can use the time to develop mathematical and creative skills impossible to a mere mortal and then create a magic to instantly teleport you away from wherever you are and then go about doing whatever.

When I die in Dungeons and Dragons I always tell the DM the same thing.
Keep playing. Bring on the outer realms. Lets have an adventure.

Death is fun sometimes. Gets me lots of cool gear.
