I would except Usopp and Nami to have Haki more than any other characters. They are the weaker characters who utilize tactics and tricks to win instead of just kicking their opponents ass. This heavily favors giving them the Observation Haki/Mantra to give them that extra trickiness.
The only characters I think may not have Haki are Chopper and Franky, since they use science as their weapons, Rumbleballs and robot parts respectively.

if Zoro and Sanji don't have the Haki of Armor I will be sorely dissappointed. Also, I second Nami and Usopp having Observation. Chopper will join them with Observation and I would say that Franky is more likely to get the Armor Haki too. Brook and Robin won't get Haki because they spent their time doing other things (being world famous and learning about the locations of the Poneglyphs and the purpose of the revolutionaries).
